Mozzarella sticks

Today I experimented with the food I had in the fridge that wasn't getting eaten.  I ended up making homemade mozzarella sticks for the kids using mozzarella cheese sticks and some simple ingredients from the pantry. They were a huge hit and crazy easy to make.

Ingredients:

12 mozzarella cheese sticks
5 Tbsp Italian style bread crumbs
1 Tbsp Parmesan cheese
2 eggs beaten
Flour

Can of diced Italian style tomatoes

Start by freezing the cheese sticks.  Once frozen preheat oven to 400. Next put approximately 1/4 cup of flour into a bowl.  Mix bread crumbs and parmesan cheese in bowl. Now remove cheese sticks from the freezer and cut each into halves. Roll each stick in flour and then drag through egg. Next roll each stick through the bread crumb mixture and place on a plate. Once all cheese sticks are covered place in freezer for a few minutes while covering a baking sheet with aluminum foil. After about five minutes remove the cheese sticks from freezer and place on baking sheet. Put on rack about a third way from the bottom of the oven. Bake four minutes, turn cheese sticks over and bake about five minutes longer.  Keep an eye on them as oven temps vary and you don't want them to totally melt.

While they're baking place the diced tomatoes in a small pot on the stove on high. Once boiling add about 2 Tbsp corn starch and stir with a fork. This made a perfect dipping sauce.

Total prep and cook time was around 20 minutes.
